The liver of chicken, fowl, and fish is commonly eaten as food by humans. Domestic pig, ox, lamb, calf, chicken, and goose livers are widely available from butchers and supermarkets. Liver can be baked, boiled, broiled, fried, stir-fried, or eaten raw (asbeh nayeh or sawda naye in Lebanese cuisine, liver sashimi). In many preparations, pieces of liver are combined with pieces of meat or kidneys, like in the various forms of Middle Eastern mixed grill (e.g. meurav Yerushalmi). Liver is often made into spreads. Well-known examples include liver pâté, foie gras, chopped liver, and leverpastej. Liver sausages such as Braunschweiger and liverwurst are also a valued meal. Liver sausages may also be used as spreads. A traditional South African delicacy, namely Skilpadjies, is made of minced lamb's liver wrapped in netvet (caul fat), and grilled over an open fire. 

Chicken livers are rich in iron, copper and preformed vitamin A. Traditionally, some fish livers were valued as food, especially the stingray liver. It was used to prepare delicacies, such as poached skate liver on toast in England, as well as the beignets de foie de raie and foie de raie en croute in French cuisine. Cod liver oil is commonly used as a dietary supplement. Very high doses of vitamin A have the potential to be toxic and can cause avitaminosis A, a dangerous disorder. There have been several anecdotal reports and a few scientific studies of vitamin A poisoning due to the consumption of the livers of polar bears, walruses, bearded seals, moose, and huskies. The livers of these animals can contain very high levels of vitamin A. The main ingredients are slices of liver (usually pork, beef or, in the United Kingdom, lamb) and onions; onion is favoured as an accompaniment to liver as the flavour of onion "cuts" the somewhat metallic flavour of liver, which can be off-putting to some eaters. The liver and the onions are usually fried or cooked together, but sometimes they may be fried separately and mixed together afterwards. The liver is often cut in fine slices, but it also may be diced.In Brazil (where tortillas are unknown to the vast majority), though, the traditional recipe always calls for potatoes, most commonly puréed or as home fries, or some other underground-growing starchy vegetable. The liver is rubbed in plenty of good quality olive oil before being fried in the fat/oil of the cook's preference, generally vegetable oil. After the onions are fried together with the liver's reduced stock, rice, other vegetables, fried garlic and other staples (such as sweet corn, peas or lentils) might be added to the frying pan in order for their sautéing, though white rice is the preferred option. It is generally soaked with the blood/stock draining from the liver that is taken out of the frying pan somewhere between rare and medium for the frying of the onion. 
chicken livers are often forgotten these days, which is a shame as they're cheap as chips and have the most amazing flavour. Using them in a parfait really makes the most of their wonderful taste, and your friends will be so impressed you've made it yourself. I like to serve mine in the middle of the table with a big pile of little toasts and let everyone tuck in.

Preheat the oven to 110ºC/225ºF/gas ¼. Put half the butter in an ovenproof saucepan and pop it in the oven to slowly melt until it's separated – this will take about 10 minutes. Strain the yellow clarified butter into a separate bowl and set aside to cool. Discard the remaining milky-coloured butter. Heat a little olive oil in a frying pan. Slowly fry the shallots and garlic for 10 minutes, until soft and tender, then remove to a plate. Wipe the pan clean with some kitchen roll, turn up the heat then throw in the livers and most of the sage. Cook the livers for a couple of minutes on each side, until lightly coloured but still a little pink in the middle – if you overcook them they will lose their smooth texture and become grainy. Pour in the brandy. If you're using a gas hob you can flame it until the alcohol cooks off, but watch your hair! Simmer for a minute or so, then take the livers off the heat and tip them into a food processor with the cooked shallots and garlic. Blitz until you have a smooth purée. Add the rest of the softened butter and continue to blitz, then season well and add the mace. Transfer the mixture to a serving bowl. Sprinkle the remaining sage leaves over the parfait, then spoon over the clarified butter. Leave the parfait to set in the fridge for 1 hour. It will taste beautiful straight away, but it's even better if the flavours are left to develop for a couple of days. If the butter seal isn't disturbed it should last as long as two weeks, though it never lasts that long in my house. When you are ready to serve, slice up the bread and griddle the little toasts. Pile them onto a board next to your parfait with a pile of snipped cress on the side and dig in.
